Instructions
Step 1: Prepare the Crust
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
- Mix graham cracker crumbs, sugar, and melted butter in a bowl.
- Press the mixture into the pan’s bottom and bake for 8 minutes. Let cool.
Step 2: Make the Strawberry Swirl
- Cook strawberries, sugar, and lemon juice over medium heat for 5 minutes.
- Stir in the cornstarch mixture and cook for another 1-2 minutes until thickened.
- Blend until smooth and let cool.
Step 3: Make the Cheesecake Filling
- Beat cream cheese and sugar until smooth.
- Mix in vanilla, eggs (one at a time), sour cream, and flour until combined.
Step 4: Assemble & Swirl
