For the Jerky:

  • lbs lean beef (top round, flank steak, or sirloin tip), trimmed

  • ¼ cup low-sodium soy sauce

  • 2 tbsp Worcestershire sauce

  • 1 tbsp honey or brown sugar

  • 1 tbsp apple cider vinegar or lemon juice

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp smoked paprika

  • ½ tsp black pepper

  • ½ tsp red pepper flakes (optional, for a spicy kick)


Instructions

Step 1: Slice the Beef

  1. Freeze beef for 30–45 minutes to make slicing easier.

  2. Using a sharp knife, slice the beef into thin strips, about ⅛ to ¼ inch thick.

  3. Cut against the grain for a more tender texture.

Step 2: Prepare the Marinade
4. In a mixing bowl or zip-top bag, combine soy sauce, Worcestershire sauce, honey, vinegar, and all seasonings.
5. Add the sliced beef to the marinade, ensuring each piece is coated.
6. Seal and refrigerate for at least 6 hours or overnight for maximum flavor.

Step 3: Preheat and Prepare the Air Fryer
7. Remove beef from marinade and pat dry with paper towels to remove excess liquid.
8. Preheat your air fryer to 180°F (or the lowest setting).
9. Arrange beef strips in a single layer in the air fryer basket or on the rack. Leave space between each piece for proper air circulation.

Step 4: Air Fry the Jerky
10. Cook the beef at 180°F for 2 to 3 hours.
11. Flip or rotate the pieces every 30–45 minutes for even drying.
12. The jerky is done when it’s dry, darkened, and slightly chewy—but not brittle.

Step 5: Cool and Store
13. Let the jerky cool completely on a wire rack.
14. Store in an airtight container or zip-top bag. Keep at room temperature for up to 3 days or refrigerate for up to 2 weeks.
