Ingredients

Scale
  • 4 medium russet or Yukon Gold potatoes
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • 2 tablespoons Parmesan cheese, grated (optional)
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

Step 1: Prep the Potatoes

  1. Wash and dry the potatoes thoroughly.
  2. Place each potato between two chopsticks or wooden spoons. Slice the potatoes thinly, about ⅛ inch apart, stopping just before cutting all the way through.

Step 2: Season the Potatoes

  1. In a small bowl, mix together the melted butter, olive oil, garlic, salt, black pepper, and paprika (if using).
  2. Brush the mixture all over the potatoes, making sure to get in between the slices.

Step 3: Air Fry the Potatoes

  1. Preheat the air fryer to 375°F (190°C) for 3 minutes.
  2. Place the potatoes in the air fryer basket, cut side up.
  3. Air fry for 15 minutes, then brush the potatoes with the remaining butter mixture.
  4. Continue cooking for an additional 10-15 minutes until the potatoes are crispy on the edges and tender in the middle.

Step 4: Finish and Serve

  1. If desired, sprinkle the potatoes with Parmesan cheese and cook for an additional 2 minutes until the cheese is melted and golden.
  2. Garnish with fresh parsley and serve warm.

Notes

  • Use Evenly Sized Potatoes: Choose potatoes that are similar in size to ensure they cook evenly.
  • Don’t Overcut: Be careful not to slice all the way through the potato—leave the base intact for the best texture.
  • Brush Between Layers: Make sure to brush the garlic butter between each slice for maximum flavor.
  • Adjust Cooking Time: For extra crispiness, cook the potatoes for a few extra minutes.
