Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • ½ teaspoon cinnamon (optional, for extra flavor)
  • ¼ teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • ¼ cup Biscoff cookie butter (spread)
  • 1 teaspoon vanilla extract
  • Additional Biscoff spread for topping (optional)
  • Maple syrup (optional)

Instructions

Step 1: Prepare the Batter

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon (if using), and salt.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Warm the Biscoff spread in the microwave for 15–20 seconds to soften it, then whisk it into the wet ingredients until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

Step 2: Cook the Pancakes

  1. Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
  2. Pour about ¼ cup of batter onto the skillet for each pancake. Cook for 2-3 minutes on one side, or until bubbles form on the surface.
  3. Flip the pancakes and cook for another 1-2 minutes on the other side, until golden brown.
  4. Repeat with the remaining batter, greasing the skillet as needed.

Step 3: Serve

 

  1. Stack the pancakes on a plate.
  2. Warm up additional Biscoff spread and drizzle it on top, or spread it over the pancakes.
  3. Optionally, drizzle with maple syrup or a dusting of powdered sugar for extra sweetness.

Notes

  • Don’t Overmix: Overmixing can make the pancakes dense. Stir just until the dry ingredients are incorporated.
  • Make Them Extra Fluffy: Let the batter rest for a few minutes before cooking to help the pancakes rise better.

 

  • Top Creatively: You can top with whipped cream, berries, or crushed Biscoff cookies for added texture.
