Ingredients
For the Buffalo Chicken Mixture:
- Shredded Cooked Chicken (3 cups) – Rotisserie chicken works great.
- Buffalo Sauce (¾ cup) – Choose your favorite brand for the perfect spice level.
- Ranch Dressing (½ cup) – Adds creaminess and cools the heat.
- Cream Cheese (4 oz, softened) – Helps create a smooth, rich sauce.
- Garlic Powder (1 tsp) – Enhances the flavor.
- Salt & Pepper (to taste)
For the Ricotta Layer:
- Ricotta Cheese (1 ½ cups) – Makes the lasagna rich and creamy.
- Egg (1 large) – Helps bind the ricotta mixture.
- Ranch Seasoning (1 tbsp) – Brings out that classic ranch flavor.
For the Lasagna:
- Lasagna Noodles (12 sheets, cooked or oven-ready) – Your favorite kind works.
- Mozzarella Cheese (2 cups, shredded) – For that melty, gooey top.
- Cheddar Cheese (1 cup, shredded) – Adds a sharp, bold flavor.
- Green Onions (¼ cup, chopped, for garnish) – Optional, but adds freshness.
Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Step 2: Prepare the Buffalo Chicken Mixture
In a saucepan over medium heat, stir together the shredded chicken, buffalo sauce, ranch dressing, cream cheese, garlic powder, salt, and pepper. Cook until smooth and creamy. Remove from heat.
Step 3: Mix the Ricotta Layer
In a bowl, mix ricotta cheese, egg, and ranch seasoning until well combined.
Step 4: Assemble the Lasagna
- Spread a thin layer of the buffalo chicken mixture on the bottom of the baking dish.
- Add a layer of lasagna noodles.
- Spread half of the ricotta mixture over the noodles.
- Add a layer of buffalo chicken sauce, then sprinkle with mozzarella and cheddar cheese.
- Repeat the layers, ending with cheese on top.
Step 5: Bake
Cover with foil and bake for 30 minutes. Remove the foil and bake for another 10 minutes, or until the cheese is bubbly and golden.
Step 6: Cool & Serve
Let the lasagna sit for 10 minutes before slicing. Garnish with chopped green onions and an extra drizzle of ranch, if desired.
