Ingredients

  • 1 lb shrimp, peeled and deveined
  • 4 cups cooked rice (preferably cold, day-old rice works best)
  • 2 tbsp olive oil (or vegetable oil)
  • 1 small onion, diced
  • 1 cup bell peppers, diced (red, yellow, or green)
  • ½ cup frozen peas
  • 2 cloves garlic, minced
  • 2 tbsp Cajun seasoning (store-bought or homemade)
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 2 large eggs, lightly beaten
  • 1 tbsp green onions, chopped (for garnish)
  • Lemon wedges (optional, for serving)

Instructions

Step 1: Cook the Shrimp

  1. In a bowl, toss the shrimp with 1 tablespoon of Cajun seasoning to coat evenly.
  2. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
  3. Cook the shrimp for about 2-3 minutes per side until they’re pink and cooked through. Remove the shrimp from the pan and set aside.

Step 2: Cook the Vegetables

  1. In the same skillet, add the remaining 1 tablespoon of oil.
  2. Add the onion, bell peppers, and peas to the pan. Sauté for about 3-4 minutes until the vegetables are tender.
  3. Add the garlic and cook for another 30 seconds, stirring constantly.

Step 3: Prepare the Fried Rice

  1. Add the cold rice to the skillet, breaking up any clumps with a spatula. Stir to combine with the vegetables.
  2. Add the soy sauce, Worcestershire sauce, and the remaining Cajun seasoning. Stir well to evenly coat the rice and vegetables with the seasoning. Cook for 3-4 minutes until heated through.

Step 4: Scramble the Eggs

  1. Push the rice mixture to one side of the skillet.
  2. In the empty space, pour the beaten eggs. Scramble them and cook until just set, about 2 minutes. Once scrambled, mix the eggs into the rice.

Step 5: Add the Shrimp and Serve

  1. Add the cooked shrimp back to the skillet with the rice and stir everything together.
  2. Garnish with chopped green onions and serve with lemon wedges on the side, if desired.

Notes

Use cold rice – Cold, leftover rice works best as it’s less sticky and fries up better.
Adjust the spice level – If you like it milder, reduce the amount of Cajun seasoning or use a mild version.
Add extra veggies – Feel free to add mushrooms, zucchini, or even corn for more flavor and texture.
Don’t overcook the shrimp – Shrimp cook quickly, so keep an eye on them to prevent overcooking.
