Carrot Cake Layer:
- 1 cup all-purpose flour
- ½ tsp baking soda
- ½ tsp baking powder
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp ginger
- ¼ tsp salt
- ½ cup vegetable oil
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 large egg
- ½ tsp vanilla extract
- ¾ cup grated carrots
- ¼ cup chopped walnuts or pecans (optional)
Cheesecake Layer:
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 egg
- ½ tsp vanilla extract
Instructions
Step 1: Preheat & Prep
- Preheat oven to 350°F (175°C).
- Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
Step 2: Make the Carrot Cake Batter
- In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
- In a separate large bowl, whisk together oil, brown sugar, granulated sugar, egg, and vanilla until smooth.
- Stir in the grated carrots and nuts (if using).
- Gradually fold in the dry ingredients until just combined.
Step 3: Make the Cheesecake Layer
- In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth and creamy.
Step 4: Assemble the Bars
- Spread ¾ of the carrot cake batter into the prepared pan.
- Pour the cheesecake mixture evenly over the batter.
- Drop spoonfuls of the remaining carrot cake batter on top, then swirl with a knife or toothpick for a marbled effect.
Step 5: Bake & Cool
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Allow to cool at room temperature, then refrigerate for at least 2 hours before slicing.
Notes
Use Fresh Carrots – Grate them yourself for the best texture and moisture.
Don’t Overmix – Mix just until combined for a tender cake layer.
