  • 2 boneless skinless chicken breasts, thinly sliced
  • 8 oz chow mein noodles or lo mein noodles
  • 1 tablespoon vegetable oil
  • 1/2 cup yellow onion, sliced
  • 1 cup carrots, julienned

How to Make It:

Step 1: Cook the Noodles

  1. Cook the chow mein noodles according to the package instructions. Drain and set aside.

Step 2: Prepare the Sauce

  1. In a small bowl, whisk together the soy sauce, hoisin sauce, oyster sauce, sesame oil, rice vinegar, brown sugar, and red pepper flakes (if using). Set aside.

Step 3: Cook the Chicken

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced chicken breasts and cook for 5-7 minutes, until browned and cooked through. Remove the chicken from the skillet and set aside.

Step 4: Stir-Fry the Vegetables

  1. In the same skillet, add a little more oil if needed and stir-fry the onion, carrots, bell pepper, and broccoli for about 4-5 minutes until they begin to soften but still have some crunch.
