For the Banana Bread:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream or Greek yogurt
  • 3 ripe bananas, mashed

For the Cream Cheese Layer:

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Cinnamon Swirl:

  • ¼ cup brown sugar
  • 1 teaspoon cinnamon

Instructions

Step 1: Prepare the Batter

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In a separate large bowl, whisk together melted butter, sugar, eggs, and vanilla extract until smooth.
  4. Stir in sour cream (or Greek yogurt) and mashed bananas.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 2: Make the Cream Cheese Layer

  1. In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth and creamy.

Step 3: Make the Cinnamon Swirl

  1. In a small bowl, mix together brown sugar and cinnamon.

Step 4: Assemble the Bread

  1. Pour half of the banana bread batter into the loaf pan.
  2. Spread the cream cheese mixture evenly over the batter.
  3. Sprinkle half of the cinnamon sugar mixture on top.
  4. Pour the remaining banana bread batter over the cream cheese layer.
  5. Sprinkle the rest of the cinnamon sugar on top and gently swirl with a knife.

Step 5: Bake the Bread

  1. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, tent with foil during the last 15 minutes.
  2. Allow the bread to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

Use Overripe Bananas – The riper, the better for natural sweetness.
Do Not Overmix – Mix until just combined for a soft texture.
Layer Carefully – Spread the cream cheese layer evenly for a perfect swirl.
