For the Banana Bread:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon cinnamon
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream or Greek yogurt
- 3 ripe bananas, mashed
For the Cream Cheese Layer:
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
For the Cinnamon Swirl:
- ¼ cup brown sugar
- 1 teaspoon cinnamon
Instructions
Step 1: Prepare the Batter
- Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, and cinnamon.
- In a separate large bowl, whisk together melted butter, sugar, eggs, and vanilla extract until smooth.
- Stir in sour cream (or Greek yogurt) and mashed bananas.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Step 2: Make the Cream Cheese Layer
- In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth and creamy.
Step 3: Make the Cinnamon Swirl
- In a small bowl, mix together brown sugar and cinnamon.
Step 4: Assemble the Bread
- Pour half of the banana bread batter into the loaf pan.
- Spread the cream cheese mixture evenly over the batter.
- Sprinkle half of the cinnamon sugar mixture on top.
- Pour the remaining banana bread batter over the cream cheese layer.
- Sprinkle the rest of the cinnamon sugar on top and gently swirl with a knife.
Step 5: Bake the Bread
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, tent with foil during the last 15 minutes.
- Allow the bread to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
Notes
Use Overripe Bananas – The riper, the better for natural sweetness.
Do Not Overmix – Mix until just combined for a soft texture.
Layer Carefully – Spread the cream cheese layer evenly for a perfect swirl.
