For the Chicken:

  • 2 boneless, skinless chicken breasts (butterflied and halved)
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (Panko or regular)
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 egg, beaten
  • 2 tablespoons olive oil (for frying)

For the Garlic Sauce:

 

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

Instructions

  • Prepare the Chicken:

    • In a shallow bowl, mix Parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper.
    • Dip each chicken piece in the beaten egg, then coat with the Parmesan mixture.
  • Cook the Chicken:

    • Heat olive oil in a large skillet over medium heat.
    • Cook the chicken for 3–4 minutes per side until golden brown and crispy.
    • Transfer to a plate and cover to keep warm.
  • Make the Garlic Sauce:

    • In the same pan, melt butter and sauté minced garlic for 1 minute.
    • Add chicken broth, heavy cream, Parmesan, Italian seasoning, salt, and pepper. Stir well.
    • Simmer for 5 minutes. If needed, add the cornstarch mixture to thicken the sauce.

 

  • Serve:

    • Pour the garlic sauce over the crispy Parmesan chicken.
    • Garnish with fresh parsley or extra Parmesan.

Notes

  • Lighter Option: Swap heavy cream for half-and-half or Greek yogurt.
  • Extra Crispy: Double-coat the chicken for a crunchier texture.
  • Low-Carb Alternative: Use almond flour instead of breadcrumbs.
  • Spicy Kick: Add a pinch of red pepper flakes to the sauce.
