Ingredients

  • 2 lbs baby potatoes (or Yukon Gold potatoes)
  • 2 tablespoons olive oil
  • ¾ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon dried oregano (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

Step 1: Prepare the Potatoes

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the potatoes to remove any dirt. Pat them dry with a towel.
  3. Cut the potatoes into halves or quarters, depending on their size, so they are all roughly the same size for even cooking.

Step 2: Season the Potatoes

  1. In a large mixing bowl, toss the cut potatoes with olive oil, ensuring they are well-coated.
  2. Add the Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper. Toss again until the potatoes are evenly coated with the seasoning and cheese.

Step 3: Roast the Potatoes

  1. Line a baking sheet with parchment paper for easy cleanup (optional).
  2. Arrange the potatoes in a single layer on the baking sheet, cut side down. This helps achieve a crispy texture.
  3. Roast in the preheated oven for 25-30 minutes, flipping the potatoes halfway through to ensure they brown evenly.

Step 4: Garnish and Serve

 

  1. Once the potatoes are golden and crispy, remove them from the oven.
  2. Garnish with fresh parsley if desired, and serve hot.

Notes

  • Cut Evenly – Make sure the potato pieces are all roughly the same size so they cook evenly.
  • Don’t Overcrowd the Baking Sheet – If the potatoes are too crowded, they will steam rather than crisp up.

 

  • Add More Cheese – For extra cheesy goodness, sprinkle more Parmesan on top during the last 5 minutes of baking.
