For the Potato Bites:

  • 2 large russet potatoes, peeled & cut into 1-inch cubes
  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup grated Parmesan cheese (optional)

For the Herb Yogurt Sauce:

 

  • ½ cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped (or ½ tsp dried dill)
  • 1 tbsp fresh parsley, chopped
  • 1 garlic clove, minced
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

Step 1: Prepare the Potatoes

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper in a bowl until evenly coated.

Step 2: Bake the Potatoes

  1. Spread the potatoes on a lined baking sheet in a single layer.
  2. Bake for 25-30 minutes, flipping halfway, until crispy and golden brown.
  3. Optional: Sprinkle with Parmesan cheese in the last 5 minutes of baking for extra flavor.

Step 3: Make the Herb Yogurt Sauce

  1. In a small bowl, mix together Greek yogurt, lemon juice, dill, parsley, minced garlic, salt, and black pepper.
  2. Stir well and refrigerate until ready to serve.

Step 4: Serve & Enjoy

 

  1. Transfer the crispy potato bites to a serving plate.
  2. Serve with the Herb Yogurt Sauce on the side for dipping.

Notes

Soak the Potatoes – Soaking diced potatoes in cold water for 30 minutes removes excess starch, making them crispier.
Don’t Overcrowd the Pan – Spread potatoes out evenly to prevent steaming.
Use High Heat – Baking at 425°F (220°C) ensures a crispy crust.
Air Fryer Option – Cook at 400°F (200°C) for 15-18 minutes, shaking the basket halfway.
