Ingredients
For the Casserole:

3 cups cooked white or brown rice

3 cups chopped broccoli (steamed or lightly cooked)

1 can (10.5 oz) cream of mushroom or chicken soup

1 cup sour cream or plain Greek yogurt

1 ½ cups shredded cheddar cheese (divided)

¼ cup milk

1 teaspoon garlic powder

Salt & pepper, to taste
Optional Toppings:

½ cup crushed butter crackers or breadcrumbs

1 tablespoon melted butter (for topping)
Instructions
Preheat your oven to 350°F (175°C).
Lightly grease a 9×13” baking dish with butter or cooking spray.
Steam or microwave the broccoli until just tender (about 3–4 minutes). Set aside.
In a large bowl, combine cooked rice, broccoli, soup, sour cream, 1 cup of shredded cheese, milk, garlic powder, salt, and pepper. Stir until well mixed and creamy.
Spread the mixture evenly into your prepared baking dish.
Top with the remaining ½ cup of cheese.
If using, mix the crushed crackers with melted butter and sprinkle over the top for a crispy finish.
Bake uncovered for 25–30 minutes or until bubbly and golden on top.
Let rest for 5 minutes before serving.
