For the Casserole:

  • 3 cups cooked white or brown rice

  • 3 cups chopped broccoli (steamed or lightly cooked)

  • 1 can (10.5 oz) cream of mushroom or chicken soup

  • 1 cup sour cream or plain Greek yogurt

  • 1 ½ cups shredded cheddar cheese (divided)

  • ¼ cup milk

  • 1 teaspoon garlic powder

  • Salt & pepper, to taste

Optional Toppings:

  • ½ cup crushed butter crackers or breadcrumbs

  • 1 tablespoon melted butter (for topping)


Instructions

Step 1: Prepare the Ingredients

Preheat your oven to 350°F (175°C).
Lightly grease a 9×13” baking dish with butter or cooking spray.
Steam or microwave the broccoli until just tender (about 3–4 minutes). Set aside.

Step 2: Mix the Casserole

In a large bowl, combine cooked rice, broccoli, soup, sour cream, 1 cup of shredded cheese, milk, garlic powder, salt, and pepper. Stir until well mixed and creamy.

Step 3: Assemble

Spread the mixture evenly into your prepared baking dish.
Top with the remaining ½ cup of cheese.
If using, mix the crushed crackers with melted butter and sprinkle over the top for a crispy finish.

Step 4: Bake

Bake uncovered for 25–30 minutes or until bubbly and golden on top.
Let rest for 5 minutes before serving.


Notes

Use Fresh or Frozen Broccoli – Just steam it lightly before mixing in.

Make It a Meal – Stir in shredded rotisserie chicken or cooked sausage for a protein boost.

Cheese Matters – Sharp cheddar gives a bold flavor, but feel free to use Monterey Jack, Colby, or a blend.
