Ingredients
For the Tostadas:

6 corn tortillas

2 tbsp vegetable oil (for brushing)

½ tsp salt
For the Toppings:

1 tbsp vegetable oil (for cooking)

4 large eggs

Salt and pepper to taste

1 can (15 oz) refried black beans or pinto beans

1 cup shredded cheddar or Mexican blend cheese

1 avocado, sliced

½ cup cherry tomatoes, halved

¼ cup red onion, finely chopped

2 tbsp fresh cilantro, chopped

¼ cup sour cream or Greek yogurt

Your favorite salsa or hot sauce

Instructions
Step 1: Bake the Tostadas

Preheat your oven to 400°F (200°C).

Arrange corn tortillas on a baking sheet and brush both sides lightly with vegetable oil.

Sprinkle with salt and bake for 5 minutes. Flip and bake another 4-5 minutes, or until golden and crispy. Remove from oven and set aside.
Step 2: Heat the Beans
4. In a small saucepan over medium heat, warm the refried beans.
5. Stir occasionally until heated through. You can thin them out slightly with a tablespoon of water if needed for easier spreading.
Step 3: Cook the Eggs
6. In a nonstick skillet, heat 1 tbsp oil over medium heat.
7. Crack in the eggs and cook to your preference—sunny side up, over easy, or scrambled.
8. Season with a pinch of salt and pepper.
Step 4: Assemble the Tostadas
9. Spread a generous layer of warm refried beans over each crispy tortilla.
10. Sprinkle with shredded cheese while the beans are hot, so the cheese starts to melt.
11. Place a cooked egg on top of each tostada.
12. Add toppings: sliced avocado, cherry tomatoes, red onion, and cilantro.
Step 5: Garnish & Serve
13. Drizzle with sour cream or Greek yogurt.
