Ingredients
- 1 cup all-purpose flour
- 1 tablespoon brown sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 large banana, mashed
- ¾ cup milk (dairy or plant-based)
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Butter or oil for cooking
Instructions
Step 1: Prepare the Dry Ingredients
- In a large bowl, whisk together the flour, brown sugar, baking powder, salt, and cinnamon until evenly combined.
Step 2: Prepare the Wet Ingredients
- In another bowl, mash the banana until smooth (a few lumps are fine).
- Add the milk, egg, melted butter, and vanilla extract to the mashed banana and whisk until combined.
Step 3: Combine the Wet and Dry Ingredients
- Pour the wet mixture into the dry ingredients and gently stir until just combined. The batter should be slightly lumpy but smooth.
Step 4: Cook the Pancakes
- Heat a griddle or non-stick skillet over medium heat and lightly grease with butter or oil.
- Once the skillet is hot, pour ¼ cup of batter onto the skillet for each pancake.
- Cook for 2-3 minutes, until bubbles form on the surface. Flip the pancakes and cook for another 2-3 minutes, or until golden brown on both sides.
- Continue with the remaining batter, greasing the skillet as needed.
Step 5: Serve & Enjoy!
- Serve the pancakes hot, topped with extra sliced bananas, a drizzle of maple syrup, or a dusting of powdered sugar.
Notes
Use Ripe Bananas – The riper the banana, the sweeter and more flavorful the pancakes will be.
Don’t Overmix – Stir just until combined to keep the pancakes light and fluffy.
Adjust Heat – If the pancakes brown too quickly, lower the heat slightly to allow the inside to cook through.
Toppings – Add chocolate chips, nuts, or whipped cream for extra indulgence!
