- 1/2 cup cooked ham, diced
- 1/4 cup pineapple, diced (fresh or canned)
- 1 tablespoon butter
- Salt and pepper, to taste
- Fresh parsley or green onions, for garnish (optional)
Instructions
Step 1: Prepare the Ingredients
- Dice the cooked ham and pineapple into small bite-sized pieces.
- In a bowl, whisk the eggs with milk or cream until smooth and creamy. Season with salt and pepper to taste.
Step 2: Cook the Ham and Pineapple
- Heat a skillet over medium heat and melt the butter.
- Add the diced ham and pineapple to the skillet. Stir occasionally and cook for about 2–3 minutes, until the ham is heated through and the pineapple has softened slightly.
Step 3: Scramble the Eggs
- Pour the beaten eggs into the skillet with the ham and pineapple mixture.
- Allow the eggs to set for a moment, then gently stir with a spatula, scraping the edges to allow uncooked eggs to flow to the center.
- Continue stirring occasionally, cooking over low-medium heat until the eggs are fluffy and just set, but still soft and creamy.
Step 4: Serve & Enjoy!
- Remove the eggs from the skillet and plate them immediately.
- Garnish with fresh parsley or green onions if desired.
