1 cup powdered sugar
-
1 tsp vanilla extract
-
1½ cups whipped topping (like Cool Whip)
For the Cake Batter Pudding Layer:

1 box (3.4 oz) instant vanilla pudding mix
-
1½ cups cold milk
-
½ cup dry Funfetti cake mix
-
½ tsp almond extract (optional)
-
½ cup whipped topping
-
2 tbsp rainbow sprinkles
For the Topping Layer:
-
2 cups whipped topping
-
Extra rainbow sprinkles
-
Crushed cookies or white chocolate shavings (optional)
Instructions
Step 1: Prepare the Crust
Crush the golden sandwich cookies into fine crumbs using a food processor or by placing them in a sealed bag and smashing with a rolling pin.
In a mixing bowl, combine the cookie crumbs with melted butter.
Press the mixture evenly into the bottom of a 9×13-inch baking dish.
Chill in the refrigerator while you make the next layer.
Step 2: Mix the Cream Cheese Layer
In a bowl, beat the softened cream cheese, powdered sugar, and vanilla until smooth and creamy.
Fold in the whipped topping gently until fully combined.
Spread this mixture evenly over the chilled cookie crust. Return to the fridge.
Step 3: Make the Pudding Layer
Whisk together the vanilla pudding mix and cold milk until slightly thickened (about 2 minutes).
Add the dry cake mix and almond extract (if using), and whisk again until smooth.
Fold in the whipped topping and rainbow sprinkles.
Spread this layer evenly over the cream cheese mixture.
Step 4: Add the Final Topping
Spread the remaining whipped topping over the pudding layer.
Sprinkle generously with extra rainbow sprinkles.
For added flair, top with crushed cookies, white chocolate curls, or birthday candles.
Step 5: Chill & Serve
Cover the dessert with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
Once fully set, slice into squares and serve cold.
Notes
Use Cold Ingredients – Helps layers set more quickly and cleanly.
Let It Chill Fully – This dessert needs time to firm up; overnight is ideal.
Wipe Between Slices – For neat layers, clean your knife between cuts.
Go Crazy with Toppings – More sprinkles, mini marshmallows, or a drizzle of white chocolate make it even more fun.
Customize the Colors – Use themed sprinkles for holidays or other events.
