Ingredients

For the Garlic Butter Steak Tips:

  • Sirloin Steak (1 lb, cut into bite-sized pieces) – Tender and full of flavor.
  • Salt & Black Pepper (to taste) – Enhances the natural flavors of the steak.
  • Garlic Powder (½ tsp) – Adds depth to the steak seasoning.
  • Olive Oil (1 tbsp) – For searing the steak tips.
  • Butter (3 tbsp) – Creates a rich, flavorful sauce.
  • Garlic (4 cloves, minced) – The key to that bold garlic butter flavor.
  • Fresh Parsley (2 tbsp, chopped) – Adds a fresh finish.

For the Cheesy Rigatoni:

  • Rigatoni Pasta (12 oz) – The perfect shape to hold the creamy sauce.
  • Butter (2 tbsp) – Helps create a velvety sauce.
  • Flour (2 tbsp) – Thickens the cheese sauce.
  • Milk (1 ½ cups) – The base for a creamy texture.
  • Cheddar Cheese (1 cup, shredded) – Melts beautifully into the sauce.
  • Parmesan Cheese (½ cup, grated) – Adds a nutty, salty flavor.
  • Salt & Black Pepper (to taste) – For a perfectly seasoned sauce.

Instructions

Step 1: Cook the Rigatoni
Boil a large pot of salted water and cook the rigatoni according to package instructions. Drain and set aside.

Step 2: Sear the Steak Tips
Pat the steak tips dry with a paper towel, then season with salt, black pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Add the steak tips and sear for 3–4 minutes per side until browned. Remove from the pan and set aside.

Step 3: Make the Garlic Butter Sauce
Reduce the heat to medium and add the butter to the skillet. Once melted, stir in the minced garlic and cook for 1 minute until fragrant. Return the steak tips to the pan, toss to coat in the garlic butter, and sprinkle with fresh parsley. Remove from heat.

Step 4: Prepare the Cheesy Rigatoni Sauce
In a separate pot, melt butter over medium heat. Whisk in the flour and cook for 1 minute to remove the raw taste. Gradually pour in the milk, whisking constantly, until smooth. Let it thicken for 2–3 minutes. Stir in the shredded cheddar and Parmesan cheese until melted and smooth. Season with salt and black pepper to taste.

Step 5: Combine & Serve
Toss the cooked rigatoni in the cheesy sauce until fully coated. Plate the cheesy rigatoni and top with the garlic butter steak tips. Garnish with extra parsley or Parmesan if desired.

  • Use Room-Temp Steak: This helps it cook evenly.
  • Don’t Overcook the Steak: Cook to medium-rare or medium for the best texture.

  • Shred Your Own Cheese: Pre-shredded cheese doesn’t melt as well.
