Ingredients

For the Marinade:

  • 3 tbsp honey

  • Juice and zest of 2 limes

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • ½ tsp ground cumin

  • ½ tsp smoked paprika

  • ¼ tsp chili flakes (optional for heat)

  • Salt and black pepper to taste

For the Foil Packs:

  • 4 tilapia fillets (about 56 oz each)

  • 2 cups corn kernels (fresh, canned, or thawed from frozen)

  • 1 red bell pepper, diced

  • 1 zucchini, sliced into half moons

  • 1 cup cherry tomatoes, halved

  • ½ red onion, thinly sliced

  • 2 tbsp fresh cilantro, chopped

  • Lime wedges, for serving


Instructions

Step 1: Make the Honey-Lime Marinade

  1. In a mixing bowl, whisk together honey, lime juice and zest, olive oil, garlic, cumin, smoked paprika, chili flakes, salt, and pepper.

  2. Taste and adjust seasoning if needed.

Step 2: Prep the Foil Packs

  1. Tear off 4 large sheets of aluminum foil, about 12 x 16 inches each.

  2. In the center of each foil sheet, divide the corn, bell pepper, zucchini, tomatoes, and red onion evenly.

  3. Pat tilapia fillets dry and place one fillet on top of the vegetables on each foil sheet.

  4. Spoon the honey-lime marinade evenly over each fillet, allowing it to drizzle down onto the veggies.

Step 3: Fold & Seal the Foil Packs

  1. Fold the sides of the foil over the fish and vegetables, sealing the edges tightly to form a closed packet.

  2. Ensure each packet is sealed well to trap steam and flavor during cooking.

Step 4: Cook the Foil Packs

Oven Method:

  1. Preheat oven to 400°F (200°C).

  2. Place foil packs on a baking sheet and bake for 18–20 minutes, until the fish flakes easily with a fork.

Grill Method:

  1. Preheat grill to medium-high heat.

  2. Place foil packs directly on the grill grates and cook for 10–12 minutes, flipping halfway through if desired.

Step 5: Garnish & Serve

 

  1. Carefully open each foil packet (be cautious of hot steam).

  2. Sprinkle fresh cilantro over the top.

  3. Serve with lime wedges and your favorite side like rice, quinoa, or crusty bread.


Notes

Use Heavy-Duty Foil – Prevents tearing and makes cleanup easier.

Don’t Overcook – Tilapia cooks quickly; check for doneness at the minimum time.

Prep Ahead – Assemble foil packs in the morning and refrigerate until ready to cook.

Make It a Meal – Serve with a side of avocado salad, tortilla chips, or herbed rice.
