Ingredients
For the Cheese Toasties:
-
4 slices of your favorite bread (white, whole wheat, or sourdough)
-
1 ½ cups Irish cheddar cheese (or any good melting cheese)
-
2 tablespoons butter (softened)
-
1 tablespoon Dijon mustard (optional, for a flavor kick)
-
½ teaspoon dried thyme or rosemary (optional, for herb notes)
Optional Add-Ins:
-
2–3 slices fresh tomato
-
2–3 slices ham or bacon
-
Fresh parsley or chives, for garnish
Instructions
Grate the Irish cheddar into a bowl for even melting.
Butter one side of each bread slice (this will be the crispy exterior).
If using mustard or herbs, spread a thin layer of mustard on the unbuttered side and sprinkle with herbs.
Place two slices of bread on a surface, buttered side down.
Top with grated cheese and any extras like tomato or ham.
Place the remaining bread on top, buttered side facing up.
Heat a skillet over medium heat.
Add your sandwich and cook for 3–4 minutes per side until golden and the cheese is melted. Press down gently with a spatula for crispier texture.
If browning too fast, reduce heat to avoid burning before the cheese melts.
Let your toastie rest for a minute before slicing in half.
Serve hot with salad, soup, or just a cup of tea for the ultimate comfort meal.
Notes
Choose a Good Melting Cheese – Irish cheddar, Gruyère, or mozzarella all work well.
Low & Slow – Toast slowly to get crisp edges and fully melted cheese.
Flavor Boosters – A touch of Worcestershire or caramelized onions can take it over the top.
Fresh Bread is Best – Slightly thick slices hold up better under melty cheese.
