Description

These Mediterranean Stuffed Chicken Breasts are bursting with flavor! Filled with a mixture of tangy feta cheese, juicy tomatoes, and olives, and seasoned with herbs, these chicken breasts are a healthy and delicious way to bring a taste of the Mediterranean to your dinner table. Baked to perfection, they make a wonderful main dish for any meal.

 


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

Step 1: Prepare the Chicken

  1. Preheat the oven to 375°F (190°C).
  2. Place each chicken breast between two sheets of plastic wrap or parchment paper, and use a meat mallet or rolling pin to gently pound the chicken to an even thickness, about 1/2-inch thick.
  3. Season both sides of the chicken breasts with salt, pepper, garlic powder, and dried oregano.

Step 2: Make the Filling

  1. In a small bowl, combine the crumbled feta cheese, chopped Kalamata olives, and sun-dried tomatoes. Mix well.

Step 3: Stuff the Chicken

  1. Lay the chicken breasts flat and spoon the feta, olive, and tomato mixture onto the center of each breast.
  2. Fold the chicken over the stuffing and secure with toothpicks or gently tuck the edges to seal.

Step 4: Cook the Chicken

  1. Heat olive oil in a skillet over medium-high heat.
  2. Sear each chicken breast for 2-3 minutes on both sides, just until golden brown.
  3. Transfer the seared chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Step 5: Serve & Enjoy!

 

  1. Remove the chicken from the oven and discard the toothpicks.
  2. Garnish with fresh basil or parsley if desired and serve immediately.

Notes

  • Pounding the Chicken: Be careful not to over-pound the chicken to avoid tearing. It should be thin enough to roll but still intact.
  • Secure the Filling: If the chicken doesn’t stay closed, you can secure it with toothpicks to prevent the stuffing from spilling out.

 

  • Use Fresh Ingredients: For the best flavor, use fresh sun-dried tomatoes and quality feta cheese.
