For the Omelette:

  • 3 large eggs

  • 2 tbsp milk (optional, for fluffier eggs)

  • Salt and pepper to taste

  • 1 tbsp oil or butter

For the Filling:

  • ¼ cup onion, finely chopped

  • ¼ cup red bell pepper, diced

  • ¼ cup green bell pepper, diced

  • ¼ cup tomato, seeded and chopped

  • ¼ cup cooked beef or chicken sausage, chopped or crumbled

  • ¼ cup canned black beans, rinsed and drained

  • ½ tsp ground cumin

  • ½ tsp smoked paprika

  • ¼ tsp chili powder (optional for spice)

  • ½ cup shredded cheddar or Monterey Jack cheese

For Garnish & Serving:

  • Fresh cilantro, chopped

  • Avocado slices or guacamole

  • Salsa or pico de gallo

  • Lime wedges

  • Warm tortillas or toast (optional side)


Instructions

Step 1: Prep the Ingredients

  1. Dice all veggies and chop the sausage if needed.

  2. Rinse and drain the black beans.

  3. Shred your cheese and prepare garnishes.

Step 2: Make the Filling

  1. Heat 1 tsp oil or butter in a skillet over medium heat.

  2. Add onions and cook for 1-2 minutes until soft.

  3. Stir in bell peppers and cook for another 2-3 minutes.

  4. Add tomato, sausage, and black beans.

  5. Sprinkle in cumin, paprika, and chili powder.

  6. Cook for another 2-3 minutes, then remove from heat and set aside.

Step 3: Beat the Eggs

  1. In a bowl, whisk the eggs with milk (if using), salt, and pepper until light and frothy.

Step 4: Cook the Omelette

  1. Wipe the skillet clean and add 1 tbsp oil or butter over medium heat.

  2. Pour in the egg mixture, tilting the pan to spread it evenly.

  3. Let it cook undisturbed for 1-2 minutes until the edges begin to set.

  4. Use a spatula to gently lift the edges and let the uncooked egg flow underneath.

  5. Continue cooking until mostly set but still a little soft on top.

Step 5: Add Filling & Fold

  1. Spoon the cooked filling over one side of the omelette.

  2. Sprinkle cheese on top of the filling.

  3. Carefully fold the omelette in half over the filling.

  4. Let it cook for 30 seconds to melt the cheese, then slide onto a plate.

Step 6: Garnish & Serve

  1. Top with chopped cilantro and avocado slices or guacamole.

  2. Add a spoonful of salsa or pico de gallo.

  3. Serve with lime wedges and warm tortillas or toast.


Notes

Use Medium Heat – Keeps the eggs tender without browning.

Don’t Overfill – Too much filling can tear the omelette.

Cook Eggs Gently – Avoid overcooking; they should be soft but fully set.
