For the Crust:

  • 1 cup graham cracker crumbs

  • 3 tbsp unsalted butter, melted

  • 1 tbsp granulated sugar

  • Pinch of salt

For the Cheesecake Filling:

  • 16 oz cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • ¼ cup sour cream or plain Greek yogurt

  • 1 tsp vanilla extract

  • 2 tbsp all-purpose flour

  • ¼ cup rainbow sprinkles (use jimmies, not nonpareils)

Optional Toppings:

  • Whipped cream

  • Extra sprinkles

  • Birthday candles or mini toppers

  • White chocolate drizzle


Instructions

Step 1: Prep the Oven & Pan
Preheat oven to 325°F (163°C).
Line a muffin tin with 12 cupcake liners and set aside.

Step 2: Make the Crust
In a bowl, combine graham cracker crumbs, melted butter, sugar, and a pinch of salt.
Divide evenly among the 12 liners (about 1 tablespoon each).
Press down firmly with the back of a spoon or small glass to compact the crust.
Bake for 5 minutes, then remove and let cool.

Step 3: Make the Cheesecake Filling
In a large mixing bowl, beat the softened cream cheese until smooth and fluffy.
Add sugar and mix until well combined.
Add eggs one at a time, beating lightly after each.
Mix in sour cream and vanilla extract.
Add flour and mix until just combined.
Gently fold in rainbow sprinkles with a spatula—don’t overmix.

Step 4: Fill the Liners
Spoon the batter into each crust-lined cup, filling nearly to the top.
Tap the muffin tin lightly on the counter to release air bubbles.

Step 5: Bake
Bake for 18–22 minutes, or until centers are just set and slightly jiggly.
Turn off the oven and let the cheesecakes cool inside with the door slightly open for 10 minutes.

Step 6: Cool & Chill
Transfer to a wire rack and let cool completely.
Refrigerate for at least 2 hours (or overnight) until fully set.

Step 7: Decorate & Serve
Before serving, top with whipped cream and extra sprinkles.
Add a birthday candle or fun topper for a festive touch.


Notes

Use Room Temperature Cream Cheese – This ensures a silky, smooth filling.

Don’t Overbeat After Adding Eggs – Too much air can cause cracking.

Let Cool Gradually – Avoids sudden temperature changes that can lead to sinking.

Use Jimmies Sprinkles – Nonpareils can bleed and change the batter color.
