Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted

For the Filling:

  • 16 oz cream cheese, softened
  • 1 cup sweetened condensed milk
  • ½ cup key lime juice (or fresh lime juice)
  • 1 tbsp lime zest
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar

For Garnish: (optional)

  • Whipped cream
  • Lime slices or zest
  • Extra graham cracker crumbs

Instructions

Step 1: Prepare the Crust

  1. Mix graham cracker crumbs, sugar, and melted butter in a bowl until combined.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan or pie dish.
  3. Refrigerate for 15 minutes while preparing the filling.

Step 2: Make the Cheesecake Filling

  1. In a large bowl, beat cream cheese until smooth.
  2. Add sweetened condensed milk, key lime juice, lime zest, and vanilla extract, and mix until well combined.
  3. In another bowl, whip heavy cream and powdered sugar until stiff peaks form.
  4. Gently fold the whipped cream into the cheesecake mixture.

Step 3: Assemble & Chill

  1. Pour the cheesecake filling over the crust and spread evenly.
  2. Cover and refrigerate for at least 4 hours (or overnight for best results).

Step 4: Garnish & Serve

  1. Before serving, decorate with whipped cream, lime slices, and graham cracker crumbs if desired.
  2. Slice and enjoy!
