For the Cheesecake Bites:

  • 24 Oreo cookies (plus 23 more for garnish)

  • 8 oz (225g) cream cheese, softened

  • 1 teaspoon vanilla extract

  • Pinch of salt

Optional Coating & Garnish:

  • 8 oz white chocolate or semi-sweet chocolate, melted

  • Crushed Oreos or melted chocolate for drizzling


Instructions

Step 1: Make the Cheesecake Mixture

Crush the Oreos into fine crumbs using a food processor or by smashing them in a zip-top bag. In a medium bowl, beat the softened cream cheese, vanilla, and a pinch of salt until smooth and creamy. Add the crushed Oreos and mix until a thick dough forms.

Step 2: Shape the Bites

Scoop the mixture using a spoon or small cookie scoop and roll into balls. Place each one on a parchment-lined tray. Freeze for 30–45 minutes until firm.

Step 3: Coat in Chocolate (Optional)

Melt chocolate in a microwave-safe bowl in 20-second intervals, stirring in between. Dip each chilled cheesecake bite in the chocolate and place it back on the tray. Sprinkle with crushed Oreos or drizzle with more melted chocolate before it sets.

Step 4: Chill & Serve

 

Refrigerate for another 30 minutes to allow the coating to fully harden. Once set, serve immediately or store in the fridge.
