Ingredients:

  • 1 ½ cups old-fashioned rolled oats
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter (softened)
  • ½ cup brown sugar (packed)
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups semi-sweet chocolate chips
  • Optional: 1/2 cup chopped nuts (walnuts or pecans)

Instructions:

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C).
  2. Grease or line a 9×9-inch baking pan with parchment paper for easy removal of the bars later.

Step 2: Prepare the Dry Ingredients

  1. In a medium bowl, whisk together the flour, baking soda, salt, and rolled oats. Set aside.

Step 3: Cream the Butter and Sugars

  1. In a large mixing bowl, beat together the butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes) using an electric mixer.

Step 4: Add Wet Ingredients

  1. Add eggs and vanilla extract to the butter mixture. Beat until well combined.

Step 5: Combine Wet and Dry Ingredients

  1. Gradually add the dry oat mixture to the wet ingredients, stirring until just combined.

Step 6: Add Chocolate Chips

  1. Fold in the chocolate chips (and nuts, if using) until evenly distributed in the batter.

Step 7: Bake the Bars

  1. Spread the dough evenly into the prepared baking pan.
  2. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean (a few moist crumbs are fine).

Step 8: Cool and Slice

  1. Allow the bars to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely.
  2. Once cooled, cut into squares and enjoy!
