Ingredients

Scale

1 ½ cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
½ cup creamy peanut butter
¼ cup brown sugar (or honey or maple syrup)
1 large egg
1 cup milk (dairy or plant-based)
1 teaspoon vanilla extract (optional)

Optional Add-ins
½ cup chocolate chips or chopped peanuts
1 mashed banana (for extra moisture and flavor)
2 tablespoons jam or jelly (swirled into the top)

Instructions

Step 1: Preheat and Prep
Preheat your oven to 350°F (175°C)
Grease a 9×5-inch loaf pan or line with parchment paper

Step 2: Mix Wet Ingredients
In a large bowl, whisk together peanut butter, brown sugar, egg, milk, and vanilla until smooth and creamy

Step 3: Add Dry Ingredients
Stir in flour, baking powder, and salt until just combined
Do not overmix—this keeps the bread tender
Fold in any add-ins like chocolate chips or banana if using

Step 4: Fill the Pan
Pour batter into the prepared loaf pan
Smooth the top with a spatula
If using jam, spoon small dollops across the top and swirl gently with a knife

Step 5: Bake
Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely

Notes

Use creamy peanut butter for the smoothest texture
Let ingredients come to room temperature before mixing
Don’t overbake—check for doneness at 45 minutes
Allow it to cool before slicing to avoid crumbling
Add cinnamon or chopped nuts for extra flavor and crunch
