Ingredients
For the Meatloaf:

2 lbs ground beef

1 small green bell pepper, finely diced

1 small red bell pepper, finely diced

1 small yellow onion, finely diced

2 cloves garlic, minced

2 eggs

1 cup breadcrumbs

¼ cup milk

1 tbsp Worcestershire sauce

1 tsp salt

½ tsp black pepper

½ tsp smoked paprika
-
½ tsp dried oregano
For the Cheese Layer:

1 ½ cups shredded provolone or mozzarella cheese (plus more for topping if desired)

Optional: 4 slices cheddar or American-style cheese for extra creaminess
For Garnish:

2 tbsp fresh parsley, chopped
Instructions
Step 1: Sauté the Vegetables
Heat a splash of oil in a skillet over medium heat.
Add the diced onions and bell peppers. Sauté for 4–5 minutes until softened.
Add the garlic and cook for another 30 seconds.
Remove from heat and allow to cool slightly.
Step 2: Make the Meatloaf Mixture
In a large mixing bowl, combine ground beef, breadcrumbs, milk, eggs, Worcestershire sauce, salt, pepper, paprika, and oregano.
Add the sautéed pepper mixture and stir to combine evenly.
Do not overmix—just enough to bring everything together.
Step 3: Layer the Cheese
Divide the meat mixture into two equal portions.
Press one half into the bottom of a greased loaf pan.
Create a shallow trench down the center and fill with shredded provolone (and optional cheese slices for extra gooeyness).
Top with the remaining meat mixture and seal the edges so the cheese stays inside during baking.
Step 4: Bake the Meatloaf
Preheat oven to 375°F (190°C).
Cover the loaf with foil and bake for 30 minutes.
Remove foil and sprinkle more cheese over the top if desired.
Bake uncovered for another 20–25 minutes, or until internal temperature reaches 160°F (71°C).
Let rest for 10 minutes before slicing.
Step 5: Slice and Serve
Garnish with fresh chopped parsley.
Slice thick and serve with your favorite sides, or tuck into a hoagie roll for the ultimate cheesesteak sandwich-style meal.
