Instructions
Step 1: Prepare the Batter
In a large bowl, whisk together the flour, baking powder, salt, sugar, and cinnamon (if using). In another bowl, beat the eggs, then mix in the milk and vanilla extract. Slowly combine the wet and dry ingredients, stirring until smooth.
Step 2: Add the Apples
Gently fold in the thinly sliced apples to coat them evenly in the batter.
Step 3: Heat the Oil
Heat about 2 tablespoons of vegetable oil in a skillet over medium heat.
Step 4: Cook the Pancakes
Spoon about ¼ cup of batter per pancake into the skillet. Flatten slightly with a spoon. Cook for 2–3 minutes per side, until golden brown and cooked through.
Step 5: Drain and Serve
Transfer the cooked pancakes to a paper towel-lined plate to absorb excess oil. Sprinkle with powdered sugar or serve with honey, jam, or yogurt.
