For the Beef & Gravy:

  • 2 lbs beef stew meat or chuck roast, cut into chunks

  • 1 tbsp vegetable oil

  • 1 small onion, finely chopped

  • 3 garlic cloves, minced

  • 1½ tsp salt

  • 1 tsp black pepper

  • 1 tsp onion powder

  • 1 tsp paprika

  • ½ tsp dried thyme

  • 3 cups beef broth (low sodium)

  • 1 tbsp soy sauce

  • 1 tbsp Worcestershire sauce

For Finishing the Dish:

  • 1 can (10.5 oz) cream of mushroom soup

  • ½ cup sour cream (optional for creaminess)

  • 12 oz egg noodles (wide or extra wide)

  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

Step 1: Sear the Beef

  1. Heat vegetable oil in a large skillet over medium-high heat.

  2. Add beef in batches and sear until browned on all sides. This adds depth of flavor.

  3. Transfer the browned beef to the slow cooker.

Step 2: Add Aromatics & Seasoning

  1. In the same skillet, sauté onions for 2–3 minutes until softened.

  2. Stir in garlic and cook for 30 seconds.

  3. Transfer the mixture to the slow cooker.

  4. Season with salt, pepper, onion powder, paprika, and thyme.

  5. Pour in the beef broth, soy sauce, and Worcestershire sauce. Stir well.

Step 3: Slow Cook the Beef

  1. Cover and cook on Low for 8 hours or High for 4–5 hours, until the beef is fork-tender.

  2. Once fully cooked, shred the beef slightly or break it apart with a spoon.

Step 4: Cook the Noodles Separately

  1. About 15–20 minutes before serving, bring a pot of water to a boil.

  2. Cook egg noodles according to package directions until al dente.

  3. Drain and set aside.

Step 5: Add Creamy Elements & Noodles

  1. Stir the cream of mushroom soup into the beef mixture until well combined.

  2. For added creaminess, stir in the sour cream.

  3. Add the cooked noodles to the slow cooker and gently mix to coat everything evenly.

  4. Let it all warm together for 10 minutes on Low.

Step 6: Garnish & Serve

  1. Sprinkle chopped parsley over the top.

  2. Serve hot with crusty bread or a side salad.
