Ingredients:
- 1 ½ lbs baby potatoes (Yukon Gold, red, or fingerling)
- 3 tbsp olive oil
- 2 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp fresh thyme (or ½ tsp dried)
- 1 tsp fresh rosemary, chopped (or ½ tsp dried)
- ¼ cup grated Parmesan cheese (optional, for extra crispiness)
- Fresh parsley, chopped (for garnish)
Instructions:
1. Boil the Potatoes
- Place the baby potatoes in a large pot and cover them with salted water.
- Bring to a boil and cook for 15-20 minutes, or until fork-tender.
- Drain and let them cool slightly.
2. Smash the Potatoes
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Arrange the boiled potatoes on the baking sheet and use a fork or potato masher to gently smash each one until they’re about ½ inch thick.
3. Season & Bake
- In a small bowl, mix together the olive oil, melted butter, garlic, salt, pepper, thyme, and rosemary.
- Brush or drizzle the mixture over the smashed potatoes.
- Bake for 20-25 minutes, or until golden and crispy.
- If using Parmesan, sprinkle it on about 5 minutes before the potatoes are done.
4. Garnish & Serve
- Sprinkle with fresh parsley and serve hot!
