Ingredients
For the Crust:
- 1 ½ cups graham cracker crumbs
- 3 tbsp sugar
- ½ cup unsalted butter, melted
- ¼ tsp cinnamon (optional)
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 2 cups heavy whipping cream
- 2 tsp vanilla extract
- 1 tbsp lemon juice
For the Topping:
- 1 ½ cups fresh strawberries, sliced
- 1 ½ cups fresh peaches, sliced
- 1 cup blueberries
- 1 tbsp honey or maple syrup (optional)
- Mint leaves for garnish (optional)
Instructions
Step 1: Prepare the Crust
- In a mixing bowl, combine graham cracker crumbs, sugar, melted butter, and cinnamon (if using).
- Stir until the mixture is fully combined and the crumbs are evenly coated.
- Press the mixture into the bottom of a 9-inch springform pan, creating an even layer.
- Use the back of a spoon to compact the crust. Chill the crust in the refrigerator while you make the filling (about 10 minutes).
Step 2: Make the Cheesecake Filling
- Using an electric mixer, beat the cream cheese in a large bowl until smooth and creamy.
- Gradually add the powdered sugar, mixing until smooth and fully combined.
- Add the heavy whipping cream, vanilla extract, and lemon juice.
- Beat on high speed until the mixture becomes thick and fluffy, about 3-4 minutes.
- Spread the cheesecake filling evenly over the chilled graham cracker crust. Use a spatula to smooth the top.
Step 3: Chill the Cheesecake
- Refrigerate the cheesecake for at least 4 hours or until it’s set. For best results, refrigerate overnight.
Step 4: Prepare the Fruit Topping
- While the cheesecake is chilling, prepare the fruit. Slice the strawberries and peaches and set aside.
- In a small bowl, mix the sliced fruit with the blueberries. If you want a touch of extra sweetness, drizzle honey or maple syrup over the fruit and gently toss.
Step 5: Assemble the Cheesecake
- Once the cheesecake has set, carefully remove it from the springform pan and place it on a serving platter.
- Top the cheesecake with the prepared summer berries and peaches. Arrange them however you like, making it as decorative as you want.
- Garnish with mint leaves for an added pop of color and freshness (optional).
