Ingredients

Scale

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • 3 tbsp sugar
  • ½ cup unsalted butter, melted
  • ¼ tsp cinnamon (optional)

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups heavy whipping cream
  • 2 tsp vanilla extract
  • 1 tbsp lemon juice

For the Topping:

  • 1 ½ cups fresh strawberries, sliced
  • 1 ½ cups fresh peaches, sliced
  • 1 cup blueberries
  • 1 tbsp honey or maple syrup (optional)
  • Mint leaves for garnish (optional)

Instructions

Step 1: Prepare the Crust

  1. In a mixing bowl, combine graham cracker crumbs, sugar, melted butter, and cinnamon (if using).
  2. Stir until the mixture is fully combined and the crumbs are evenly coated.
  3. Press the mixture into the bottom of a 9-inch springform pan, creating an even layer.
  4. Use the back of a spoon to compact the crust. Chill the crust in the refrigerator while you make the filling (about 10 minutes).

Step 2: Make the Cheesecake Filling

  1. Using an electric mixer, beat the cream cheese in a large bowl until smooth and creamy.
  2. Gradually add the powdered sugar, mixing until smooth and fully combined.
  3. Add the heavy whipping cream, vanilla extract, and lemon juice.
  4. Beat on high speed until the mixture becomes thick and fluffy, about 3-4 minutes.
  5. Spread the cheesecake filling evenly over the chilled graham cracker crust. Use a spatula to smooth the top.

Step 3: Chill the Cheesecake

  1. Refrigerate the cheesecake for at least 4 hours or until it’s set. For best results, refrigerate overnight.

Step 4: Prepare the Fruit Topping

  1. While the cheesecake is chilling, prepare the fruit. Slice the strawberries and peaches and set aside.
  2. In a small bowl, mix the sliced fruit with the blueberries. If you want a touch of extra sweetness, drizzle honey or maple syrup over the fruit and gently toss.

Step 5: Assemble the Cheesecake

  1. Once the cheesecake has set, carefully remove it from the springform pan and place it on a serving platter.
  2. Top the cheesecake with the prepared summer berries and peaches. Arrange them however you like, making it as decorative as you want.
  3. Garnish with mint leaves for an added pop of color and freshness (optional).

Step 6: Serve & Enjoy

  1. Slice the cheesecake into wedges and serve chilled. Enjoy the refreshing, fruity flavors of summer in every bite!

Notes

Use Room Temperature Cream Cheese – This ensures a smooth, lump-free cheesecake filling.
Let the Cheesecake Set – Be patient and let the cheesecake chill completely to achieve the perfect texture.
Customize the Fruit – If you can’t find fresh peaches or berries, frozen fruit works too, just thaw it and drain any excess liquid before topping.
Make it Gluten-Free – Swap the graham cracker crust for a gluten-free option.
