  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups grated zucchini (about 1 medium zucchini)
  • ½ cup chopped walnuts or pecans (optional)

  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 tablespoons fresh orange juice
  • 1 teaspoon orange zest

Instructions

Step 1: Prepare the Zucchini Bread

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, beat the eggs and sugar together until well combined.
  4. Add the oil and vanilla extract to the egg mixture and beat until smooth.
  5. Fold in the grated zucchini (no need to peel it) and the chopped nuts, if using.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Step 2: Make the Orange Cream Cheese Glaze

  1. In a small bowl, beat the softened cream cheese until smooth and creamy.
  2. Add the powdered sugar, orange juice, and orange zest, and beat until the glaze is smooth and pourable.
  3. If the glaze is too thick, add a little more orange juice until you reach the desired consistency.

Step 3: Drizzle the Glaze

  1. Once the zucchini bread has completely cooled, drizzle the orange cream cheese glaze over the top of the loaf.
  2. Allow the glaze to set for a few minutes before slicing and serving.

  • Do not overmix the batter to ensure the bread stays light and fluffy.
  • Grate the zucchini finely to avoid large pieces of zucchini in the bread.
  • Drain excess moisture from the zucchini if it’s very watery by gently squeezing it in a clean kitchen towel.
